Company Breakfast Takeover – Richard’s Shakshuka

A North African dish that versions of have been in Mediterranean cuisine for thousands of years. Basically it’s eggs poached in a delicious tomato sauce. Lovely served with these soft and fluffy flatbreads.

Ingredients:

For the Shakshuka:

• 1 can chopped tomatoes
• 1 small red or white onion, sliced
• Small red chilli, sliced *
• 1 tsp sugar
• ½ Tsp Ground Cumin *
• ½ Tsp Smoked Paprika *
• Small bunch fresh coriander *
• 1 clove garlic crushed
• Tbsp Olive Oil
• 2 eggs

* These flavourings are optional and you can add whatever you like. Nigella seeds, fennel seeds, Ground coriander, garam masala, nutmeg, etc – Make it your own!

For the flatbread:

• 100g self raising Flour
• 4 Tbsp plain natural yoghurt

Here again feel free to add flavourings to the flour before mixing. I particularly like Nigella seeds and ground fenugreek…..

Equipment:

• 1 non-stick frying pan
• 1 medium saucepan
